11/4/09 (191.20 pdf doc) Hello.  November is Diabetes Education Month.  Diabetes is a disease in which a persons body does not properly control the amount of sugar in the blood.  This disease occurs when the body fails to either produce enough insulin or use insulin properly.  There are four types of diabetes: Type 1 diabetes mellitus, Type 2 diabetes mellitus, gestational diabetes mellitus, and secondary diabetes.  See this week's Wellness Buddy for more information regarding Diabetes and the importance of management.  More information will be devoted to diabetes in upcoming November Wellness Buddy's.  Make a batch of Southwestern Breakfast Tortilla Wraps (271.79 pdf doc) ahead of time so you can zap one in the microwave for a fast filling breakfast.  You can wrap each filled tortilla in plastic wrap as much as three days before using.   Reheat one wrap (still in the plastic wrap) in the microwave on 100 percent power (high) for 30 seconds to 1 minute.  Health and happiness.
10/28/09 (93.22 pdf doc) Happy Treat Week.  More Joy for Soy Diabetes Care April 2008, reports the benefits of tofu, edamame, and soy burgers as particularly for your heart and kidneys if you have type 2 diabetes.  There are many other health benefits associated with soy products and the prevention and alleviation of discomforts from other chronic conditions.  Don't discount the use of tofu when cooking.  Tofu alone does taste bland; however it does absorb the flavors and aroma of the other foods and ingredients that it is cooked with.  Keep in mind tofu doesn't stand up to long periods of cooking.  When your recipe calls for a mixture of items, be sure to add the tofu at the last minute, heat your recipe thoroughly and remove it from the heat just before serving.  Chili with Tofu (260.78 pdf doc) is a great recipe to try if you would like to go on a "supermarket safari" and try something new.  Health and happiness.

9/16/09 (95.91 pdf doc) Hello.  An estimated 30 million to 50 million American adults are lactose intolerant.  Digestive problems, stomach pain, diarrhea, bloating, or gas happen in some children (and adults) who have lactose intolerance.  These people may have trouble digesting lactose, the natural sugar found in milk and milk products.  Lactose intolerance appears to be hereditary, passed down from parent to child through genes.   Even though people vary in their degree of lactose intolerance, most can usually consume 8 ounces (1 cup) of milk without experiencing symptoms.  This week's Wellness Buddy provides more information about lactose intolerance and the recipe for Mango Salsa Chicken Over Rice (268.95 pdf doc) is lactose free.   Health and happiness.
